One Pot Rice

Ingredients

Rice
Water

Method

Ratios for different white rice
Short grain (sushi) rice - 1 cup rice to 1.1 cups water
Medium grain (Jasmin) rice - 1 cup rice to 1.25 cups water
Long grain (Basmati) rice - 1 cup rice to 1.5 cups water

Place the rice and water into a pot. I like to use a dutch oven. Let them soak for 20 mins. Bring to boil (with lid on), reduce the heat to the lowest setting and continue to cook for 20 mins (keep the lid on), turn off the heat, let it rest for 10, and it's done!

Now that technique is out of the way, here is how you add flavor!! Add toppings at minute 15. 🤫 I love using leftover roasted chicken or steak!

I used 1/2 lb short neck clams seasoned with 1 tablespoon of sesame oil and miso (homemade by @danahn17) and 1/2 cup of chopped beet stems.
